MINESTRONE SOUP 



3 tablespoons unsalted butter
3 cloves garlic, minced

1 white or yellow onion, chopped
1 carrot, sliced
Kosher salt and freshly ground black pepper
4 cups low-sodium chicken broth
3 cups roughly chopped Swiss chard leaves
4 ounces small pasta shells (about 1 heaping cup)
4 ounces green beans, cut into 1-inch pieces (about 1 cup)
1 teaspoon dried oregano
One 16-ounce jar tomato and sausage pasta sauce
One 15-ounce can cannellini beans, rinsed and drained
1 yellow summer squash, sliced into half-moons
1 zucchini, sliced into half-moons
1/4 cup fresh basil leaves, torn
Freshly grated Parmesan, for serving



How to make this recipe.

Melt the butter in a Dutch oven set over medium-high heat. Add the garlic, onions and carrots and cook, stirring often, until the onion is translucent, about 5 minutes. Season lightly with salt and pepper.

Stir in the chicken broth, chard, pasta, green beans, oregano, pasta sauce, cannellini beans, squash, zucchini, 1 cup water, 2 teaspoons salt and several grinds of pepper. Bring to a simmer and cook until the pasta is cooked and the vegetables are tender, about 5 minutes.

Divide among 6 bowls and top with the torn basil and Parmesan.

Coconut Banana Muffins

Coconut Banana Muffins







Here is a simple, healthy, lactose free, diary free and scrumptious breakfast or a simple snack recipe. This banana bread muffins is no ordinary banana bread! It's infused with the deliciousness and healthy benefits of coconut oil along with the nutrients of the bananas. 

Ingredients:


  • 1/2 coconut oil 
  • 1 teaspoon of Pure vanilla extract
  • 1/2 cup coconut flakes
  • 1/2 cup slice walnuts (optional) 


Start by Preheating the oven to *350 degrees. Greased 12 muffin tin with non-stick cooking spray. 

In a Large bowl, whisk together the flour, salt, baking soda and cinnamon. Mix it well. Pamela's Products Gluten Free Artisan Flour Blend, 4 Pound

Cream the coconut oil and brown sugar until well combine. Add eggs one at a time. Add mashed bananas, blend well. 

Stir in dry ingredients into wet ingredients, mix until combined. Stir in the pure Vanilla extract. Don't over mix.  Scoop batter in to prepare muffin tins, about 3/4th of the way full. 

Bake for 25 min or until golden brown.

Dikon with Turkey Soup






    It's that time of year again! Yes, the cold  and flu is upon us. Some, like my family has an early start to the cold season. Once one member gets sick, the whole family contracts it, which effects our functions, even cooking! Now who has time to cook a healthy delicious meal? 

    This Dikon with Turkey soup takes about 30 minutes from start to finish. The flavors of the Dikon and the simple spices gives this soup the bursting flavors. It's easy, delicious and best of all healthy! 

 


Dikon with Turkey Soup

Ingredients
  • 2 lb package ground turkey
  • 3 garlic cloves , minced
  • 1 quarter of an onion , diced
  • 3 inches of fresh ginger, cut into 4s
  • 2 tablespoons of olive oil



Vegetables 


  • 1 stalk of celery, chopped 
  • 1 lb dikon, peeled and cubed 
  • 1 carrot, cut into chunks 
  • 2 spring onions (the white part of the onions)
  • 2 14 oz can of broth 
  • 2 14oz water 
  • 2 cups cooked brown rice mix with Quinoa

Season with
  • 1 teaspoon of Savory spices
  • 1 teaspoon of Salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 4 tablespoons of chicken bouillon 
Garnish with chopped spring onions



In a large pot, start by Caramelizing the minced garlic, diced onions and ginger in 2 tablespoons of olive oil. Sprinkle on a teaspoon of salt, stir. 

Once it starts to caramelized, add in the ground Turkey,  2 tablespoons of chicken bouillon.  Stir until it cooks about half way.









Once the Ground Turkey cooks halfway, add all the vegetables along with 2 cups of mixed brown rice and Quinoa. Mix in the ground black peppers and a teaspoon of savory spice. 



Pour in two 14 oz can of broth and
two 14oz water. Stir and cover until the vegetables are tender. Remove the slices of ginger and discard. Add salt to taste. Sprinkle on the spring onions and serve hot.

Green Mango Herb Salad

Green Mango Herb Salad




 Green Mango Herb salad is a scrumptious and healthy side dish that goes very well with baked or fried fish. One bite and you will fall in love with the flavors and dances in your mouths. This is on of my favorite side dish when I was a kid. I also included a video tutorial below. 



Green Mango Herb Salad


Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes


Ingredients
Thai chili peppers & Spring Onions
  • 2 cups of shredded Green Mango
  • 2 to 3 handful of Herbs
  • 1 Stem Sliced spring onions
  • 1 minced garlic
  • 3 to 4 minced Thai chili peppers ( more or less depends on your level of preferred spiciness)
  • 3 teaspoons of sugar
  • 5 tablespoons of fish sauce Squid Brand Fish Sauce, 24-Ounce Bottle (Pack of 2)
  • 2 teaspoons of Msg (optional)

Cooking Directions
Shredded Green mango


  1. In a large bowl, Add in the shredded green mango, toss in the herbs and spring onions. Follow by the minced galic and minced chillis peppers.
  2. In a small bowl, add in the fish sauce, sugar and Msg. Stir in the garlic and minced Thai chilli peppers. Stir the sauce until the sugar dissolves.
  3. Drizzle the dressing gradually and toss the salad until the dressing compeletly cover the salads. Serve well with baked, fried or grilled fish.
