Easy Baked Tilapia





Simple healthy baked Tilapia right on the grill, oven or fried. Serve with the Green Mango Herb Salad to complete your healthy meal.





Baked Tilapia Ingredients



  • about 2 lb Tilapia
  • 1 stem of lemon grass, cut into 3 equal parts
  • 3 to 4 tablespoons of Cloves of garlic, unpeeled
  • 3-4 kaffir lime leaves
  • 1 teaspoons of salt
  • 2 teaspoons of ground ginger
  • 2 teaspoons of ground black pepper
  • 1 1/2 teaspoons of paprika
  • 4-5 tablespoons of olive oil, divided
  • 3 long pieces of foil

Cooking Directions


Start by stuffing the fish cavity with the lemon grass, garlic cloves and the kaffir lime leaves. Sprinkle on the salt, ground black pepper, ground ginger and paprika. Massage the fish thoroughly.



On the foil, drizzle 2 to 3 tablespoons of olive oil and place the fish in the middle. Wrap the fish securely and bake on a grill or oven at 425 degrees for 40 minutes. Flip the fish at 20 minutes and continue to bake for another 20 minutes.

Grilling Tip:

For a perfect grilled fish instead of baking. 
Use a BBQ rack and brush it with olive oil. This prevents the fish skins to peel off. Cook 20 minutes aside at 425 degrees. 

Let the fish rest for a couple of minutes and serve with the delicious, healthy Green Mango Herb Salad.

Green Mango Herb Salad

Green Mango Herb Salad




 Green Mango Herb salad is a scrumptious and healthy side dish that goes very well with baked or fried fish. One bite and you will fall in love with the flavors and dances in your mouths. This is on of my favorite side dish when I was a kid. I also included a video tutorial below. 



Green Mango Herb Salad


Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes


Ingredients
Thai chili peppers & Spring Onions
  • 2 cups of shredded Green Mango
  • 2 to 3 handful of Herbs
  • 1 Stem Sliced spring onions
  • 1 minced garlic
  • 3 to 4 minced Thai chili peppers ( more or less depends on your level of preferred spiciness)
  • 3 teaspoons of sugar
  • 5 tablespoons of fish sauce Squid Brand Fish Sauce, 24-Ounce Bottle (Pack of 2)
  • 2 teaspoons of Msg (optional)

Cooking Directions
Shredded Green mango


  1. In a large bowl, Add in the shredded green mango, toss in the herbs and spring onions. Follow by the minced galic and minced chillis peppers.
  2. In a small bowl, add in the fish sauce, sugar and Msg. Stir in the garlic and minced Thai chilli peppers. Stir the sauce until the sugar dissolves.
  3. Drizzle the dressing gradually and toss the salad until the dressing compeletly cover the salads. Serve well with baked, fried or grilled fish.

Turkey Egg Rolls




Turkey Egg Roll











Egg rolls is a great appetizer for all occasions. This can be made with your choice of meat(s). Eggrolls goes very well with sweet and sour dipping sauce. It can also be frozen for future use (when its frozen do not thaw, fry it while frozen but only few at a time).






Turkey Egg-Rolls

Ingredients

  • 1 lb Ground Turkey
  • 1 all purpose spring roll wrapper
  • A Quarter of A thinly shredded Green Cabbage
  • A Quarter of A thinly Red Cabbage
  • About 1 cup of sliced thinly yellow onion
  • small bundle of soaked, drained sliver bean thread




Season with


  • 1 teaspoon of salt
  • 2 teaspoons black ground pepper
  • 4 teaspoons of ginger
  • 4 to 5 cloves of minced Garlic
  • 4 tablespoons of Granulated chicken stock




Binding 

3 lightly beaten egg yolk or 3 tablespoons of corn starch paste (starch and water)

Vegetable oil to fry


Filling: 

In a large pan add olive oil, ground meat, garlic, stir frequently until its about half way cooked, then add the vegetables, seasonings and stir frequently for about a minute. 

Drain the excess mixture drippings, stir in the drained bean thread and let it cool down before you begin rolling. On a flat surface (small cutting board works perfect) lay on a sheet of spring roll wrapper with one pointed end towards you, put about a teaspoon of mixture towards you, fold the pointed end once and fold the other sides and roll it tightly(not too tight it might break the wrapper) and seal the end of the flaps with egg yolk or starch paste. 


A fryer is a best investment and it's inexpensive.  Deep fry at 375 degrees in about 2 inches of oil until golden.

Quinoa with Mix Brown Rice






Quinoa with Mix Brown Rice  
is a healthy replacement and alternative to the traditional steam jasmine white rice. This has many benefits to your health such as gluten free, Zinc, 
Riboflavin, Fibre,  Iron, Vitamin B1 and Vitamin B3. It is also an excellent pair with SEAFOOD and many other varieties of main dishes. 




Quinoa with Mix Brown Rice

Ingredients


  • 2 Cups of Mixed Brown Rice, Rinsed and soak for about an hour.
  • 1 cup of Quinoa , Rinsed
  • A pinch of Salt
  • 6 Cups of water or Chicken stock
  • 2 Tablespoons of Olive Oil






Cooking Directions


  1. In a strainer, Rinse the Quinoa until the water runs clear. Then Rinse the Mixed Brown rice until it runs clear. Soak for about an hour.
  2. In a large sauce pan, Mix the Brown Rice and Quinoa together. Add in 6 cups of water and a pinch of salt.

3. Cover and Boil on high heat.

 Once the water starts to boil for about 5 minutes lower your heat, add in about 2 tablespoons of Olive oil, Stir.  Let it simmer until all the water evaporate. Serve as a side to your favorite dish.
